Roasted Green Beans With Orange
Equipment
- Baking dish (I used an 8x8" Pyrex; you want one that can accomodate a bit of liquid)
- Large bowl for mixing
- Colander
Ingredients
- 1lb green beans (sometimes you can find them pre-trimmed!)
- 0.25 cups olive oil
- Zest of 1 small orange (approx diameter of a seltzer can)
- 1 tablespoon orange juice (juice from about half of the orange you zested)
- 0.5 tsp salt
Instructions
- Preheat oven to 375°F/190°C (350°F/176°C if using convection)
- Trim unpleasant ends off the green beans
- Rinse beans in colander
- Toss beans with olive oil, orange zest, salt, and orange juice
- Pour beans and liquid into baking dish
- Roast in oven on lowest rack for ~40 minutes. At the end of cook time, move to top rack for browning/crisping if you desire.
- Before serving, give it a good toss so that the beans get coated in the juice and oil.

- My cousin Ben made some really good green beans at Thanksgiving in 2022 that inspired this recipe. People keep asking about them!
- If you don't have orange, that's ok. I'd substitute lemon zest (if you have a lemon) and decrease the amount of lemon juice to 1 teaspoon. You can always add more lemon juice if there's not enough. If you don't have lemon, maybe try a dash of some classy vinegar.
